Southfork Ranch's Armadillo Eggs No, armadillos dont lay eggs. Still, this
makes a great name for a Texas favorite. This spicy side dish
was contributed by the Southfork Ranch, where exterior shots for
the Dallas television series were filmed. You dont
get much more Texan than that. 2 pounds pork sausage Soften sausage in a 250-degree oven for 2 to 3
minutes (do not cook). Place cheese cubes into jalapeno pieces
(1 cube to each 1/2-inch slice of pepper). Roll or pat out sausage
into 4-inch circles, approximately 1/4-inch thick. Wrap sausage
around pepper-and-cheese bundle and shape to look like an egg.
Repeat with remaining ingredients. Bake in a 350-degree oven for
