Southwestern Grill


San Antonio viewers of KENS-TV are familiar with Patsy Swendson and her popular noontime coking segments. Patsy is also the author of nearly a dozen cookbooks, ranging from breakfast recipes to sauces to cuisine for canines and felines. This recipe comes from her book Simply San Antonio.

3/4 cup packed fresh cilantro
2 jalapeno peppers, minced
1 tablespoon fresh lime juice
1 teaspoon grated lime zest
1/2 cup (1 stick) butter, softened
Salt to taste
Cayenne pepper to taste

Combine cilantro, jalapeños, and lime juice and zest in a food processor, and finely chop. Whirl in butter, salt, and cayenne pepper to blend. Transfer mixture to a saucepan and heat gently.

Use as a baste when grilling chicken, fish, seafood, or vegetables.
