Texas beer chicken is an easy-to-make recipe contributed by the “Living on the Edge” barbecue team from Houston. Led by head cook Allen Shepherd, the team specializes in two things: brisket and benefits. “We do a lot of benefits around Houston for kids, like the Make-A-Wish Foundation and the D.A.R.E. program,” Shepherd explains. “Our main objective is to help children who need help.” The group performs an adult comedy routine in the evenings at cook-offs, after they’ve spent the day tending the fires. These guys have been cooking for years, and they turn out some of the tenderest product found at area cook-offs.

Texas Beer Chicken

This unorthodox recipe for Texas beer chicken is one of the easiest, moistest recipes you’ll ever run across.

3- to 5-pound whole chicken
1 (12-ounce) can of beer
Seasonings to taste

Rinse chicken, pat dry, and season as you choose.

Open can of beer and slide bird over it, so that can inserts into cavity of chicken.

Stand the can (and the upright bird) in the cooker for 5 1/2 hours at 160 degrees.

Serves 4 to 6
