Ingredients:
3 cups diced fresh or well-drained canned fruit
1 cup sugar
1 tablespoon flour
4 frozen pie crusts (at room temperature) or homemade pie dough for four pies
Cooking Instructions:
In saucepan, mix sugar, flour and fruit. Cook over medium heat, stirring frequently, until sugar melts and syrup thickens. Set aside.

Cut pie dough into six-inch circles. Place 2 tablespoons fruit and thickened syrup in center of each circle. Leave a 1/2 inch border around the fruit. Fold each circle in half, taking care for fruit to remain in center. Seal edges of circle with a fork. Prick hole in top of each pie with fork.

In a deep fryer, heat vegetable oil to 375 degrees. Fry one pie at a time until golden brown on both sides (about five minutes).

Drain pie on paper towel. Sprinkle with sugar while hot.
Serving Suggestions:
Serve hot or cold with ice cream.
Additional Comments:
Tart shells may also be substituted for pie dough.
