Stillwater Inn, Jefferson, Texas

The Stillwater Inn is Jefferson's best restaurant, and atop that restaurant is the town's most unusual B&B. Wishing to take advantage of the bed-and-breakfast craze in Jefferson but short on space, owners Bill and Sharon Stewart ingeniously built three guest rooms into the structure's gables. With their dramatically pitched ceilings, stained-glass windows, and sunny skylights, the rooms are bright and cheerful and well complemented by the simple, stripped-pine furnishings throughout.

Among the pines and magnolias on the Stewarts' estate, a private cottage behind the Stillwater Inn is also available to guests. It is adorned simply, with pine floors, vaulted ceilings, and wicker furnishings. Another outbuilding houses conference and party facilities for up to 48 guests.

All overnight guests enjoy a free breakfast at the inn's restaurant. You might notice something different about the black coffee table in the living area of the restaurant's adjoining parlor: It is actually an enormous, 8-foot-long bellows, once used for industrial purposes but not recommended for stoking the parlor's own fireplace.
