Delforge Place, Fredericksburg, Texas One of the few traditional host homes remaining in Fredericksburg, where self-contained guest houses are the norm, Delforge Place is the lair of Betsy Delforge, the great-granddaughter of a sea captain. With help from her husband, George, and son Peter, Betsy has turned her 1898 Victorian house into a veritable walking tour of American history, with an emphasis on things nautical. The Map Room features an original oil painting of her ancestor Captain B. Jones, sailing into the port of Hong Kong in 1860. The room's other heirlooms include a trunk that Jones took to sea and an 1854 atlas presented to him aboard his ship in Singapore. The Quebec and American rooms each have their own sitting area and are furnished with antiques from the American Revolution and Civil War eras. An exterior staircase leads to a wooden platform shaped like a ship's bow, where the Upper Deck room, with porthole windows, resembles a captain's quarters. Betsy, a retired home economist, serves a breakfast that usually includes her famous sour cream twists, along with homemade crepes and a cold fruit soup.
