The Herb Haus, Fredericksburg, Texas

For lovers of herbs, gardening, or just originality, the Herb Haus offers one of the more unusual B&B experiences in Texas. The 1940s frame guest house is on the Fredericksburg Herb Farm, a four-acre plot of organic herb and flower gardens just six blocks off Main Street.

Guests can sample the farm's homemade herb teas and breads in the tearoom. In the chemist's shop, owners William and Sylvia Varney sell items from their national mail-order business, including oils, potpourris, and fragrances.

A botanical theme fittingly dominates the two-bedroom guest house, once the home of the town's midwife. Dried flowers and herbs hang from the ceiling; one of the bed frames is fashioned out of grapevines. Herbal toiletries are provided in the bath, and the breakfast of choice is "Continental herbal cuisine," including herb breads, spiced butter, fresh fruit, and even juice garnished with edible flowers.

The gardens that surround the guest house are creatively landscaped, and the Varneys' faith is echoed in flowers arranged to resemble various Christian symbols.

Location: 402 Whitney St., Fredericksburg
